I am adding a meeting to my schedule

Starting May 1st I will be the leader on Saturday. The meeting times are 8:00 AM and 9:30 AM. Bellingham center is located in the Albertson Shopping Center and we are next to Big Lots. Hope to see you there if you missed your meeting earlier in the week.

Food find


They are called "thin buns". Made by Earth Grains. Another version of the fabulous 1 pt. Sandwich Thins we have grown to love



These are the healthy specs on them


There is also 4 grams of fiber. I found them at Freddy's. Personally thought they were tastier than the Orowheat ones.

Walk It Challenge Tips


Thanks to Traci B. who found a great resource for all of us who want to know how far we are walking/ running to prepare for the Challenge. Check out http://www.mapmywalk.com/
Many of us walk different trail, neighborhoods where it would be difficult or impossible to figure mileage.
It has been suggested that we have the Bellingham Walk It Challenge on the Saturday June 5th instead of the 6th. My Fairhaven Group thought a 5K in the area would be a great location with plenty of views and places to have lunch after the walk. I was thinking it would be great fun to bring our lunches and meet in Marine Park. Let me know what you think about this.

I was thrilled to find something new from "Skinny Cow" this week at Fred Meyers. Individual servings of ice cream in yummy flavors.

Walk- It Challenge

I am looking for a member or two from each of my meetings to head a 5 k walk for their meeting. Some of the training could be done together as a group which would really solidify our meeting group and the buddy system. I can make the center available if you would like to meet prior to the start of our meeting time to walk. So I'm putting out a"shout out" to someone for Mon, Tues, 5:00 PM time.



This could be more fun than hula hooping at the center.

Love this topic!!!!!!!

Weight Watchers is the ultimate buddy system. In fact Jean Nieditch created the business based on the buddy system she created with her small group of friends in her kitchen.
Ask yourself, where can I find a buddy, why should I have a buddy, what makes a good buddy and how can I be a good buddy to someone ?????????


These feet were in the warm sands of Santa Monica beach as I enjoyed the day with my buddy( my daughter).

Food find @ Albertsons'

Found this cheese spread by accident. There are four flavors, garlic and herb, Parmesan and black pepper, jalapeƱo pepper, and plain. They are 1 pt. Great on flat out bread, tortillas, and crackers. Let me know what you find by accident.

Week 9 of the 10 week 2010 challenge

Beating Food Boredom

This week with all the great ideas about jazzing up your food choices, I wanted to include the recipe I found on e tools for the Senegalese Peanut Soup. This is a keeper in my books. The soup flavors are very similar to the soup African Peanut Soup made famous at the Colophon in Fairhaven but this WW recipe is only 4 points per serving.

Here is the recipe:


6 Servings - 1 1/2 Cups per serving - 4 points

Ingredients

2 Medium Onions, coarsley chopped
1/2 lbs. Sweet Potatoes, peeled and coarsley chopped
2 Medium Carrots, coarsley chopped
2 Medium Cloves of Garlic, coarsley chopped
2 T Fresh Ginger Root - peeled and coarsley chopped
1 t Ground Clove
1/2 t Salt
1 t Cayenne Pepper
4 C Low Sodium Veggie Broth
6 T Peanut Butter (Adam's Natural Chunky)
8 - 9 C Fresh Baby Spinach
2 T Slap Yo' Mama or hot sauce (Optional)

Directions:

1. In a soup pot, saute 2 T veggie broth with onions until onions are softened. About 3 minutes.
2. Add sweet potatoes, carrots, garlic, ginger, cloves, salt and cayenne. Saute for 2 minutes.
3. Add the rest of the veggie broth, cover the pot and simmer for

25 - 30 minutes until potatoes are tender.
4. Put the stove top ingredients into a blender or vita-mix or use an immersion blender to puree.
5. Add 3 T of peanut butter to the ingredients and puree.
6. Put pureed batches back into pan and add the other 3 T of peanut butter and the spinach. Cook on low simmer and stir until spinach is wilted.
7. Add Slap Yo' Mama or hot sauce to taste.
